A protective glove is always a compromise between protection and dexterity. The toughest glove is not the best: if it prevents you from gripping a part, it ends up taken off, and protection falls to zero.

Split or grain
Leather is split during manufacture. The grain, the outer layer, is dense and even: more supple, more tear resistant, it lets you feel the part. The split, the inner layer, is thicker and rougher: better against heat and abrasion, cheaper, but less precise.
A glove with a split back and grain palm combines both: protection where the hand rubs, sensitivity where it grips.
Reading a performance marking
Mechanical protection gloves carry a series of characters giving, in order, resistance to abrasion, cut, tear and puncture, then cut according to the current method.
A higher number is better on that specific criterion, and only on that one. A glove that is very cut resistant can be mediocre in abrasion. So start from the real risk at the workstation, not from the best overall score.
A disposable glove is not a mechanical glove
A disposable latex or nitrile glove protects against brief chemical contact and keeps hands clean. It offers no resistance to cut or puncture, and it tears at the first contact with an edge.
